FREEZE DRYING
Freeze drying is used to dehydrate and preserve various food products, without losing the products original shape, texture, color, nutrients, or taste. This is achieved by placing frozen foods under vacuum, while applying heat to dehydrate them. This ensures that the moisture contained in the product goes from its solid state directly to its vapor state. The vapor is then locked onto the condensing coils preventing it from re-entering the product. The end result is a product that can be stored at room temperature for an extended period of time without deteriorating.
